I feel so good!


I feel so good! I got a couple vegan cook books today, one is called the The Vegan Kitchen and the author has been vegan since 1959!

I made Shake 'n Bake tofu:

1 Week!

It's been a week! Yay!

I've lost 3.2 pounds since last Monday.

Vegan, day 4!

Today was pretty good, still a good amount of energy! I got my 2nd methotrexate shot (for psoriasis) today. I'm not aloud to take any vitamins while I'm doing these shots. I told the MA that I went vegan a few days ago and she said she knew a vegan, so that was pretty cool. A woman I work with knew a vegan, too.

Breakfast = Special K cereal w/ light Silk soy milk
I also drank a Bolthouse Farms Green Machine in the morning

snack = apple

lunch = I made a sandwich with the seitan roast I made out of wheat gluten last night.
Soy yogurt.

snack = pretzels w/ humus and Sweet and Beets chips

Dinner = fried tofu

Vegan, day 3!

Today was pretty good.

Breakfast
1 cup Special K (red berries) cereal w/ 1/2 cup light Silk soy milk = 145 calories
1/2 slice Thomas whole wheat bagel w/ Tofutti cream cheese = 150 calories

Snack
apple = (about 80 calories)

Lunch
organic raw almond butter and blackberry preserves sandwich = 435 calories
Fantastic Foods spicy Thai soup = 150

Snack
orange = (about 80)

Dinner
2 Meatless meatball subs = 570
also has some pretzels w/ humus and some Sweet and Beets chips = ??? guessing about 100

total calories = around 1700

Had tofutti dairy free ice cream for desert.

I made my first seitan roast out of wheat gluten!



I tried to follow this recipe. It tastes pretty good.

Vegan, day 2!

Today was pretty good, I had lots of energy! My fiance', Rachel, likes my high energy level.

Breakfast
2 cups Special K (red berries) cereal w/ 1 cup Silk soy milk = 290 calories

1/2 Thomas whole wheat bagel w/ 1/2 tablespoon Tofutti cream cheese = 150 calories

Snack
apple = about 80 calories

I also drank a small bottle of Bolthouse Farms Green machine = 280

Lunch
Salad, added baby spinach leaves, organic croutons, alfalfa sprouts w/ Amy's Sun dried tomato vinaigrette = about 415 calories

Amy's vegetable soup = 120 calories

Snack
orange = about 80 calories

Dinner
Kale Greens w/ minced garlic = 100 calories

a total of 1515 calories

I try to eat under 1600 calories a day.

I found out that I've been saying seitan wrong for 5 years! I've been saying it like "see a teen", it's pronounced "say-tan". It's a meat substitute "wheat meat".

Long Time, No Post! Went Vegan Today!

I haven't posted in a while because I initially made this to help me eat more raw, but I fell way off the band wagon! I think before I try to eat a high raw vegan diet, I want to get a regular vegan diet down! I decided to go vegan today! I'm going to be posting here more often because I'm going to use this as a food journal.

Vegan, day 1.

Breakfast
a bowl of Special K (red berries) cereal with light Silk soy milk

Snack
apple

Lunch
a veggie delight on white with sweet onion sauce from Subway

Snack
orange

Dinner
2 small meatless meatball subs, the brand of meatless meatballs were Nates, I used the store brand (Kroger) hoagie buns and the sauce was Prego Roasted Garlic and herb.

While those were cooking I ate Rold Gold braided pretzel twists with humus (from a Mediterranean olive bar at the grocery store) and "sweets and beets" chips (the brand was Terra).

Today was pretty good! I went to the grocery store and was surprised at all the normal stuff that's vegan!

I just had Tofutti (vegan ice cream substitute) for desert.

Edit - I'm not doing this for the purpose of weight loss, but I should lose weight. My start weight is 207.4
