Vegan, day 2!

Today was pretty good, I had lots of energy! My fiance', Rachel, likes my high energy level.

Breakfast
2 cups Special K (red berries) cereal w/ 1 cup Silk soy milk = 290 calories

1/2 Thomas whole wheat bagel w/ 1/2 tablespoon Tofutti cream cheese = 150 calories

Snack
apple = about 80 calories

I also drank a small bottle of Bolthouse Farms Green machine = 280

Lunch
Salad, added baby spinach leaves, organic croutons, alfalfa sprouts w/ Amy's Sun dried tomato vinaigrette = about 415 calories

Amy's vegetable soup = 120 calories

Snack
orange = about 80 calories

Dinner
Kale Greens w/ minced garlic = 100 calories

a total of 1515 calories

I try to eat under 1600 calories a day.

I found out that I've been saying seitan wrong for 5 years! I've been saying it like "see a teen", it's pronounced "say-tan". It's a meat substitute "wheat meat".
