Vegan, day 3!

Today was pretty good.

Breakfast
1 cup Special K (red berries) cereal w/ 1/2 cup light Silk soy milk = 145 calories
1/2 slice Thomas whole wheat bagel w/ Tofutti cream cheese = 150 calories

Snack
apple = (about 80 calories)

Lunch
organic raw almond butter and blackberry preserves sandwich = 435 calories
Fantastic Foods spicy Thai soup = 150

Snack
orange = (about 80)

Dinner
2 Meatless meatball subs = 570
also has some pretzels w/ humus and some Sweet and Beets chips = ??? guessing about 100

total calories = around 1700

Had tofutti dairy free ice cream for desert.

I made my first seitan roast out of wheat gluten!



I tried to follow this recipe. It tastes pretty good.
